Tofu Scramble & ‘Bologna’

Tofu scrambled with onion and heavily salt and peppered!  :o )~  Topped with tomato and served with a piece of fried ‘bologna’.  Very nice breakfast!

Grilled Corn

We spent the weekend in Callaway Gardens for the 49th annual Masters Water Ski & Wakeboarding Competition.  We had a beautiful cabin on the grounds and lived on the water and off the grill all weekend!  If you ever get the opportunity to go to Callaway, I highly recommend it.  I wish I had gotten to see and do more, but what I did see was absolutely gorgeous.

There’s no better way to eat corn on the cob than fresh off the grill!  Remove the outer layers of husk and put them on the grill while it’s still very hot.  Cook them, turning often, until the husks are good and charred.  I had these drizzled with olive oil and cajun spice!

Kalamata Cafe Sushi

Monday night, Kalamata has 1/2 off sushi night.  I enjoy this place because of the split menu.  The menu is not only very extensive, but it also includes both Greek/Meditteranean and Japanese fare.  What more could you ask for?  I can have tempura veggies and japanese curry or hummus and tabbouli.  I heart it, truly.  Their sushi menu is pretty impressive, as well.  The vegetarian options stretch beyond just a simple mushroom or avocado roll.  These are the Yamagobo and the Avocado Inari rolls.  Yamagobo is pickled burdock root.  Very similar to a carrot but with more crunch!  The Avocado Inari is sweet marinated tofu with (obviously) avocado.  You can even get Umeboshi if you want it!  I wasn’t feeling that brave lastnight…

Pasta Salad

1 small red bell pepper, chopped
1/2 jar of marinated artichoke hearts, chopped
1/2 cup blanched asparagus, chopped
1/2 cup shredded beets
1/3 cup green onion, chopped
1/4 cup ‘parmesan’
Who knows how much light zesty italian dressing
bag of tri color pasta

The pasta was an organic/natural mix of carrot, spinach and beet, I believe.  The colors in this stuff were beautiful and it was a perfect blend of sweet, tangy & crunchy.  I’m in love.

 Update:  This pic is not of the original recipe but had better quality.  This version is missing asparagus and red pepper.  Instead, it has tomatoes and green pepper!

Blackberry Bumble

I was all set to whip up some blackberry cobbler when I realized that I didn’t have any sugar!!  Damn, what was I to do?  Having just returned from the store, there’s no way I was going back so I made this up.  It’s not quite a cobbler, not quite a buckle or a crumble.  Bumble it is.  Brown sugar, Earth Balance, cinnamon, chopped walnuts, raspberry preserves, wheat flour, soy milk, vanilla & blackberries.  A half hour later…

I wish the pic had turned out better because it was honestly this side of delicious.  Warm and gooey on the inside and crumbly on top made for the perfect rice dream accompaniment.

Cannelloni

I wrapped different combinations of fillings made with ’cheese’, spinach wilted with garlic, Gimme Lean beef & portobello.  I used wonton wrappers to roll them.  Bake covered at 350 for 40 minutes, remove from oven and sprinkle with rice mozzarella.  Put back in the oven until the cheese melts.

Cucumber Sandwiches

I made these for my English class our last day of school.  Our instructor called it an ‘after theatre knosh’!  Obviously a drama course…cucumber sandwiches were my choice for Lady Bracknell.

Tofutti cream cheese mixed with green onion and olives on very soft white bread.  Thin slices of cucumber make these so refreshing!

Sunday Night Sushi Feast

Assortment of rolls with avocado, carrot, asparagus, shiitake, panko, cream cheese and crab for my friend.  Whipped up some spicy mayo and stuffed ourselves!
