Steamed Edamame

Yesterday for movie marathon day, I put these guys in the steamer with a bit of soy, garlic powder and Earth Balance.  They were so stinkin good!  Much better than popcorn.

Sushi

These were made with cucumber, carrot and caribbean jerk tofu.  One has some Tofutti cream cheese and french fried onion (from the can).  The tofu was awesome and it’s the first time I’ve been entirely happy with making it at home.  I drained it by placing it in the bottom of the strainer.  I put a paper towel on top and then a regular cotton towel over that.  Then I placed a plastic bowl over it in the strainer and put my flour canister inside it.  I wanted them pressed well!!  I dry rubbed the drained pieces and set them in the fridge until I was ready to bake.  They went in the oven at 400 for about 25-30 minutes.

Sloppy BBQ Sandwich

I took Morningstar Chikin meal starters and sauteed them with 2 kinds of BBQ sauce, one tangy and one smoky, and some hot sauce.  After they were warmed through, I put them in a food processor with some garlic and a drop or two of liquid smoke.  Slapped it on a bun with some veganaise, red lettuce and some more hot sauce!

Very Hearty Hashbrowns

I had some leftover cajun potatoes from lastnight’s dinner and deciced to stir fry them together with mushrooms, onions and spicy tofu for lunch today.  I used garlic and artichoke salsa and horseradish as condiments.  Very tasty lunch!

Potato Tacos

2 cups red potatoes

1/4 cup vegetable oil

1 pkg fajita seasoning

1/3 cup shredded cheese

shredded lettuce, tomato, avocado, salsa…any other condiments you like on your tacos.

Chop the potatoes into 1/2 inch cubes and boil until semi-soft.  (They will finish in the oven)  In a large bowl, toss the cooked potatoes with the oil and half the pkg of fajita seasoning.  If you like more flavor, toss the whole packet.  Get crazy!!  Put them on a baking sheet and sprinkle them with the cheese.  Bake at about 350 for 15-20 minutes. 

Load up your tacos!

Chikin Salad

A simple salad that was made with red lettuce, avocado, beets, chickpeas, cherry tomatoes and Morningstar chicken meal starters.  Dressed with Bragg’s, it was the perfect fresh lunch!

Bball Playoffs Party

I’m not a basketball fan, personally, but I rarely pass up the chance to grill out in a group setting!  These are veggie Brats!  (I was very happy to discover them)  They were grilled in an aluminum foil packet with beer and onions and then smothered in mustard!  Success!

Asian Dinner Night

I’ve been hitting Kalamata on Monday nights for sushi, but decided this week to stay in and try some new things.  A trip to the local Asian food market yielded some pretty great new things!  I got some dried shiitake mushrooms, a huge container of toasted sesame seeds, a bag of kim chi dumplings & an assortment of soy wrappers.  I was excited to say the least! 

First course:  Steamed Kim Chi Dumplings with a Gyoza Dipping Sauce

Second Course:  Red Miso Soup

Main Course:  The sushi is made with the soy wrappers, prepared Szechuan tofu and veggies like red lettuce, avocado, shredded burdock and the rehydrated shiitake.

Angel Hair Pasta & Mushroom Sauce

Quick and easy.  After I cooked them, I layered the pasta with the sauce in an oven safe bowl and topped with some parm and cheddar.  Baked at 300 for about 10 minutes.  Baked spaghetti!

Spanish Rice

Quick and easy.  Threw the rice in the cooker with some salsa, fresh cherry tomato halves, chili pepper and cumin.  Topped with a little diced jalapeno.
