Curry w. Quinoa

I threw some vegetable soup mix in the rice cooker with my quinoa while I prepared the curry. 

1/2 log Gimme Lean beef sausage

1/2 can chickpeas

1/2 tomato, chopped

2 green onions, chopped

chili pepper

paprika

curry powder

salt

white pepper

2 tbsp Earth Balance

6 spritzes Bragg’s

1 scallion, chopped

Saute the scallion with the beef and break it apart in the Earth Balance.  Throw in everything else and saute until you’re happy with it. 

Very detailed, I know.  I had it with a little chili ranch sauce that was both spicy and cool at the same time.
