Update: Granny was discharged from the hospital yesterday and cleared by all her therapists. Yes!! I’m going down to her place to stay with her this weekend and she said she’s fully prepared to attend Veggie Bootcamp! Stroke patients usually have high cholesterol and hypertension. My grandmother’s case was compacted further because she is diabetic. Needless to say, all the bacon and cheese in her fridge is going in the trash!!!
Her homecoming meal lastnight was eggplant parmesan with low sodium marinara and whole wheat pasta. She said it was SO much better than hospital food! Much credit to my mother for whipping up this delicious meal!!!

Large, stuffed pasta shells with vegan sausage ‘meat’balls and homemade marinara. Yum!

The marinara is pureed cherry tomatoes & red pepper with a veggie bouillon base. I sauteed onion and garlic in olive oil in the pan and then added the puree. To that I mixed in basil, thyme, bay leaf and salt.
The pasta is stuffed with a mix of braised spinach, Tofutti cream cheese, vegan parmesan and garlic. Rich.
The meatballs are Gimme Lean sausage, onion, panko, thyme, red pepper flakes, garlic, white pepper, fresh parsley and Follow Your Heart vegan mozzarella cheese. Then I FRIED them! Oh, to be Southern…
