There’s a fantastic new Indian restaurant on Kingston Pike at Walker Springs and we attacked their lunch buffet today. Their food is by far and away better than the other Indian place in town and I hope they do really well! This is an array of veggie dishes from the buffet like naan and vegetable korma. So delicious!

I love to sneak away to their buffet for lunch because it’s so close to work. This is a small salad, curry potatoes, szechuan tofu (amazing) and cauliflower with a spinach Indian inspired sauce.

Minimal effort required. Toss a cooked chikin patty in your favorite bbq sauce and hot sauce and slap it on some greens. Ta dah!

I never thought to do this before I read Melissa’s interpretation. It’s delicious! I mixed about 1/2 cup coarsely mashed chickpeas with some diced pickles and red bell pepper, about a tbsp or 2 of Veganaise and some salt and pepper. It was almost exactly like eating a tuna fish sandwich.

Some grilled kabobs at work made the afternoon so much better! The veggie kabobs are marinated in a garlic herb seasoning and packed LOTS of flavor because I continued to baste them throughout a slower grilling process. I can’t get enough grilled corn, either. I love to drizzle it in olive oil and sprinkle with with pepper.

I hope the blandness conveys in the picture! I’ve come down with one of those hellacious summer chest colds and soup is all I want to eat!
This is veggie bouillon with ramen noodles, edamame and cabbage dumplings. Sassier than what mom used to make but just as comforting.

Did these on the grill in a foil pouch with a bit of olive oil and garlic wine seasoning.

This recipe came from goveg.com. Some friends and I are having a friendly ‘get healthy’ competition to help break all those bad habits we’ve acquired this summer. I know I’ve done some backsliding, anyway. This salad is very tasty and very simple to make.
Protein Salad
3/4 c. soybeans, shelled
3/4 c. rye berries (you can find them in the bulk section at Earth Fare)
1/2 lb. firm tofu
1/2 c. veganaise
1 medium onion, diced
1/2 red bell pepper, diced
1 carrot, peeled & diced
1 small cucumber, peeled, seeded & diced
1/8 c. dried dill weed
1/8 c. apple cider vinegar
1 tbsp salt
1 tbsp medium grind black pepper
In a medium saucepan over medium heat, cook soybeans and rye berries until tender. Let cool. Crumble tofu over cooled soybeans & berries. Add remaining ingredients and stir together. Serve by itself or over a green salad.
I didn’t put as much salt and pepper as the recipe calls for. A teaspoon of each looks intimidating, much less a tablespoon!

Yesterday for movie marathon day, I put these guys in the steamer with a bit of soy, garlic powder and Earth Balance. They were so stinkin good! Much better than popcorn.
